Red quinoa with berries, milk, and agave nectar

The title might have you thinking of Wheaties, but this is more delicious and nutritious. Quinoa (pronounced keen-wa) is the rare gluten-free product that people without gluten allergies will find tasty. The Ancient Harvest brand is certified organic. It is a very healthy combination of good fats, carbohydrates, fiber, and protein. If you’re usually an oatmeal gal, this might tempt you with its jazzy colors. Sprinkle with honey or agave nectar, a mix of berries, and your favorite chopped nuts for a breakfast that will start your day off with a bang! This recipe yields 2-4 servings depending on your appetite. You can find this at your local Hiller’s and Meijer stores.

2 c. water
1 c. red quinoa
2 tbsp. agave nectar
1/2 c. berries
1/4 c. chopped pecans

Bring water and quinoa to boil in a small saucepan. Reduce to medium low heat, cover, and simmer for about 15 minutes, until grain is tender and almost all liquid has been absorbed. Remove from heat and let stand for 5 minutes. Scoop in serving bowl(s) and add agave nectar, berries, and pecans. Enjoy!
